Abstract:

PURPOSE: To obtain a frozen dough capable of providing an old fashioned doughnut which is a ring-shaped doughnut cracking the fried top surface in a circumferential form by specifying the amount of added water and shape of the dough in producing the dough.
CONSTITUTION: A dough prepared by adding 15-40 pts.wt. water to 100 pts.wt. wheat flour and regulating the hardness to 100-350 value of penetration is formed into the shape of a trapezoid or a semicircle 2 having a larger thickness on the central side than that on the peripheral edge side. The dough is initially fried with the base thereof upside, then turned over and fried to produce good breakage (crack) on the doughnut surface.
