Abstract:
PROBLEM TO BE SOLVED: To provide a method capable of simple production of doughnuts having equal quality to the doughnuts classified to soft doughnuts, in the field of production method in which, after forming dough, the frozen dough is oil fried as a doughnut.SOLUTION: Provided is a frozen doughnut dough exhibiting layer structures of dough-like dough and paste-like dough. When the dough is frozen, a dough for doughnut having equal quality to the doughnuts classified to soft doughnuts is frozen. Also, using the frozen doughnut dough, a soft and voluminous soft doughnut can be produced.
