Abstract:

PURPOSE: To provide the subject frozen jellyfish capable of a longterm preservation, defrosting without denaturation and cooking without a complicated pretreatment and to provide its production method.

CONSTITUTION: A salted jellyfish is desalted and subsequently immersed in an aqueous solution containing organic acids and sugars as the main solutes. After the above-mentioned immersion treatment, the jellyfish is directly frozen. As the result, the resultant frozen jellyfish is desalted and contains 0.3 to 0.04wt.% organic acids and 5 to 0.5wt.% sugars.
