Abstract:
To provide a high quality sea urchin frozen product in which long-term storage is possible while maintaining quality, and body corruption almost never occurs after the thawing.SOLUTION: A sea urchin frozen product is provided by containing sea urchin gonads in the immersion liquid containing at least one carbohydrate selected from sugar, sugar alcohol and water-soluble dietary fiber by the concentration of 15-40 mass%. Preferably, the immersion liquid may contain the sugar or sugar alcohol, and the water-soluble dietary fiber. Preferably, the sugar may be maltose, trehalose, lacto sucrose, galacto-oligosaccharide or isomalto-oligosaccharide, the sugar alcohol may be sorbitol, and the water-soluble dietary fiber may be indigestible dextrin, polydextrose, galactomannan or galactomannan low molecule.SELECTED DRAWING: Figure 1
