Abstract:

PURPOSE: To obtain frozen sliced bun which can maintain a high level of freshness and has largely prolonged period of time when the bread can keep itself fresh and provide the production process for such frozen sliced bun.

CONSTITUTION: The process comprises the steps of cooling after baking; slicing the bun in a prescribed thickness; spreading a plastic edible fat on the surface of the slices; freezing the slices after the edible fat is spread; and packaging the frozen slices.
