Abstract:

PROBLEM TO BE SOLVED: To stably store a bean milk without denaturating soybean proteins by freezing and storing the bean milk.
SOLUTION: This bean milk is frozen and stored (preferably at ≤-30°). The bean milk may slowly be frozen or quickly be frozen with carbon dioxide gas or nitrogen gas. Preferably, a bean suspension is heated at 45-65°C, preferably 55-65°C, for an instant to 20min, preferably 3-7min, and bean curd lees are separated from a bean milk by the use of a centrifuge, etc. The obtained bean milk is frozen and subsequently thawed to produce bean curd. The produced bean curd is excellent in elasticity and flavor, good in luster and gloss, and highly fine and smooth in texture.
