Abstract:
PURPOSE:To readily obtain the titled frozen structure without reduction in freshness of raw young sardine during thawing, by packing aggregated raw young sardine into a bag, degassing, forming the young sardine into a lamellar state, sealing and rapidly freezing. CONSTITUTION:Aggresated raw young sardine is packed into a bag, degassed and formed into a lamellar state with <=5mm thickness. Then the raw young sardine is rapidly frozen to <=-50 deg.C to give the aimed frozen structure.
