Abstract:
To solve the problem in which conventionally proposed fruit-like flavor compositions are not entirely satisfactory in terms of the masking of raw materials used in foods, the improvement of flavors of the raw materials, and palatability such as cool and refreshing feels, and to provide a novel fruit-like flavor composition that keeps high palatability for a long time, effectively improves flavors of the raw materials of foods and masks foreign odors, is stable even in acidic and basic regions, and does not impair the actions or functions of the raw materials of foods.SOLUTION: A fruit-like flavor composition contains at least one natural or synthetic flavor selected from the group of specific natural flavors, esters, alcohols, aldehydes, acetals, ketones, ketals, phenol, ether, lactones, hydrocarbons, nitrogen-containing and/or sulfur-containing compounds, and acids.SELECTED DRAWING: None
