Abstract:
PURPOSE: To obtain an edible vinegar and an UME (plum) vinegar composition, excellent in mineral and an acid alkali balances and tastiness and having salt- reducing effects.
CONSTITUTION: The objective functional edible vinegar composition is obtained by adding 0.5-1 pts.wt. pungent taste composition prepared by mixing 100 pts.wt. mixture of 80-30wt.% sodium chloride with 20-70wt.% potassium chloride with 0.2-1 pts.wt. calcium chloride and/or magnesium chloride and, as necessary, adding 0.5-2 pts.wt. trisodium citrate and/or 0.1-2 pts.wt. citric acid to 100 pts.wt. mixture of 50-80wt.% usual edible vinegar and/or salt-free UME vinegar with 20-50wt.% aqueous solution of tripotassium citrate at 5-10wt.% concentration.
