To provide a functionality-imparting seasoning having both seasoning functions and preservation functions in combination.
The functionality-imparting seasoning is obtained by mixing or kneading and uniting at least ≥5% of a mineral dissolved solution prepared by dissolving scallop shell powder or eggshell powder with a seasoning in a step of fermenting a brewed vinegar by acetic acid fermentation. The preservation functions are effectively exhibited by using antimicrobial effects of mineral ions as compared with those of a conventional seasoning and a conventional method for preserving the seasoning. Thereby, the impartment of the preservation functions in a stage of seasoning contributes to stable supply of foods, effectively utilizes resources with even excellent economical effects and conforms even intention for health.
