To provide a novel gene associated with proliferation promoting functions of acetic acid bacteria, a microbe containing the gene, and to provide a method for enhancing rate of acetic fermentation of the acetic acid bacteria, and to provide a method for effectively producing vinegar with high acetic acid concentration by using the acetic acid bacteria which has the enhanced fermentation rate.
The gene having functions enhancing the acetic acid fermentation in practical level is cloned from a practical acetic acid bacterium belonging to the genus Gluconacetobacter and Acetobacter according to a method for obtaining a gene shortening times required for culturing in a medium containing acetic acid from a chromosomal DNA library of the acetic bacterium. In a transformant in which the gene is transduced into the acetic acid bacteria, culturing the transformant in the presence of ethanol remarkably enhances the rate of acetic acid fermentation.
