To obtain a new acetic acid-tolerant gene, to breed acetic acid bacteria enhanced in acetic acid tolerance using the gene, to provide a method for improving the acetic acid tolerance of microorganisms belonging to acetic acid bacteria, and to provide a method for efficiently producing vinegar of high acetic acid concentration using the acetic acid bacteria with improved acetic acid tolerance.
The new gene comprises a DNA encoding the following protein(A) or (B): (A) a protein having an amino acid sequence shown by the Sequence No.2 or (B) a protein having an amino acid sequence with one or several amino acids substituted, deleted, inserted, added or inverted in the above-amino acid sequence and having the function of enhancing acetic acid tolerance.
