To provide a method for identifying a gene involved in the foaming of acetic acid bacteria under culture and suppressing the foaming by depressing or deleting the function of a protein encoded by the gene; to provide a method for more efficiently producing vinegar containing acetic acid in high concentrations by using acetic acid bacteria suppressed in foaming by the above method; and to provide the resultant vinegar.
The gene encoding a protein involved in the foaming of acetic acid bacteria under culture is obtained, and acetic acid bacteria suppressed in foaming by modifying the gene to modify the protein so as to depress or delete its function are obtained. Further, the method for efficiently producing the vinegar containing acetic acid in higher concentrations using the above acetic acid bacteria is provided.
