To provide a method for efficiently producing vinegar containing acetic acid in a high concentration in a short time by obtaining a new gene encoding a protein having a proliferation promoting function of acetic acid bacterium in the presence of a high-concentration acetic acid, enhancing proliferation-promoting function of acetic acid bacterium, developing an acetic acid bacterium in which high-concentration acetic acid fermentation ability is improved and using the developed acetic acid bacterium.
A new gene having a function capable of improving proliferation promoting function in a practical level is cloned from a practical acetic acid bacterium belonging to the genus Gluconacetobacter by a method obtaining a gene having a function promoting proliferation of the acetic acid bacterium in the presence of acetic acid by exposing a crushed liquid of bacterial cell of acetic acid bacterium in the presence of a high-concentration acetic acid and acquiring a gene of soluble protein not causing insolubilization by the exposure. In a transformed strain introducing the gene into the acetic acid bacterium, when the transformed strain is cultured in the presence of acetic acid and ethanol, remarkable proliferation promotion effect is confirmed.
