Abstract:
PROBLEM TO BE SOLVED: To obtain a processed product of ginseng, from which bitterness and peculiar odor which is characteristic to ginseng, capable of effectively utilizing whole active ingredient of root of ginseng and widely using for various uses.
SOLUTION: Root of fresh ginseng is, as necessary, cooled and dried at -3 to -5°C for 8-10 hr and dried at low temperature by wind force for 9-11 hr at 8-12°C, for 1.5-2.5 hr at 18-22°C and further for 1.5-2.5 hr at 28-32°C and the root of ginseng is cut in round slices and sun-dried and powdered to prepare ginseng powder from which bitterness characteristic to ginseng is removed by powdering and peculiar odor characteristic to ginseng is removed by cooling and drying as necessary.
