Abstract:

To provide a method for producing alcoholic beverages, etc., by using a brewing yeast having a high maltose and maltotriose assimilation activity, a high concentration wort or sirup-added wort.

The α-glucoside transporter gene, its use, especially the brewing yeast having the high maltose and maltotriose assimilation activity, the alcoholic beverages produced by using the yeast and the method for producing them are provided. Further more concretely, the yeast improved with the maltose and maltotriose assimilating activity by improving the expressed amount of a gene MPH2 encoding MPH2p which is the α-glucoside transporter of the brewing yeast, and especially by improving the expressed amount of non-ScMPH2 gene characteristic to beer yeasts, and the method for producing the alcoholic beverages by using the yeast are also provided.
