Abstract:
PURPOSE: To prepare novel glucosyl tagatose, by glucosylation reaction of p- nitrophenyl-α-D-glycoside with D-tagatose using α-glucosyltransferase.
CONSTITUTION: Protaminobacter rubrum, Serratia plymuthica, etc., is cultivated in the presence of sucrose to produce α-glucosyltransferase. Microbial cells containing the resultant α-glucosyltransferase, immobilized microbial cells or separated enzymes are used to carry out glucosylation reaction using p- nitrophenyl-α-D-gluside as a donor and D-tagatose as a receptor to prepare the aimed 1-0-α-D-glucosyltagatose useful as an extender and exicipient for food.
