To obtain the anti-aging agent which is easily applicable at the time of production of glutinous rice cakes and glutinous rice crackers and does not degrade the value of the final products by incorporating water-soluble hemicellulose as an effective component into this agent.
This anti-aging agent contains the water-soluble hemicellulose obtd. by eluting the same from raw materials, such as soy beans, contg. hemicellulose, by water extraction, etc., as the effective component. The anti- aging agent is mixed with food at such a ratio at which 0.05 to 10wt.%, more preferably 0.1 to 5wt.%, water-soluble hemicellulose is added to the entire amt. of the food. The agent described above has an effect of improving the peelability of the glutinous rice cakes, etc., from production appliances and suppressing the hardening of the glutinous rice cakes, etc., thawed after freeze preservation.
