Abstract:

To improve the hardly handleable property of butter, to turn the butter to an easily handleable food material and to restore it to the original state of the butter for floating oil drops on soup at the time of utilizing it.

Starch or processed starch, fine particle cellulose and water soluble protein or water soluble gums are mixed to the butter and granulated. Ti 1 pt.wt. of the butter, 0.5-3 pts.wt. of the starch or the processed starch, 0.01-0.5 pt.wt. of the fine particle cellulose and 0.01-0.4 pt.wt. of the water soluble protein or the water soluble gums are mixed.
