Abstract:

PROBLEM TO BE SOLVED: To provide a granular food material that can give characteristically smooth texture and various kinds of tastes that the conventional products has been unable to have to the food products that contain moisture and are essentially treated with heat without marked change in the shape and texture caused by the moisture and the heat.
SOLUTION: The granular food material comprises, as essential components in the material, starch that can form gel, powdery seasoning components and oil and fat components and ≤10 wt.% of water. The granular food material is produced by mixing starch that can form gel, powdery seasoning components, and oil and fat components, rolling the mixture and processing into flakes and compression-molding the flakes into granules. Finally, the heat-treated product is produced by dispersing the granular food material in a water- containing dough and gelatinizing the starch by heating.
