Abstract:

PURPOSE: To obtain the titled granular material resistant to floating on a fermentation mixture, exhibiting digesting property similar to steamed rice and directly addable to a fermentation mixture without using rice-steaming process.

CONSTITUTION: Starch or a starchy raw material is supplied to an extruder in such a manner as to get a water-content of 16W25wt.% The above raw materials are kneaded, compressed and heated in the extruder and extruded at an extrusion material temperature of 80W110°C and extrusion pressure of 20W50kg/cm2. The extrudate is cut into pellets, dried to a water-content of 8W16wt.%, gelatinized and granulated to obtain the objective product having a gelatinization degree of ≥70% and a water-absorption of 200W350%.
