Abstract:

PURPOSE: To obtain ground soybean giving soya milk having white color, resistant to infusibilization of protein in heating and suitable for the production of soya milk for aseptic bean curd, by grinding soaked soybean in water in the presence of a specific amount of air.

CONSTITUTION: Soaked soybean in ground in water e.g. with a horizontal grinder in the presence of 10W30% air based on the sum of soaked soybean and water.
