Abstract:
To provide ground meat replicas, and more specifically, plant-based products that mimic ground meat, including fibrousness, heterogeneity in a texture, beefy flavor, and red-to-brown color transition during cooking of ground meat.SOLUTION: A meat replica composition comprises: (a) about 5 wt.% to about 88 wt.% of meat dough; (b) about 0 wt.% to about 40 wt.% of a carbohydrate-based gel; (c) about 5 wt.% to about 35 wt.% of non-animal fat; (d) about 0.00001 wt.% to about 10 wt.% of a flavoring agent; (e) about 0 wt.% to about 15 wt.% of a binding agent; and (f) about 0.01 wt.% to about 4 wt.% of a heme-containing protein and/or an iron salt. The invention provides meat replicas in which a plant-based product that mimics ground meat includes proteins selected on the basis of, temperature at which they gel and/or denature to replicate a behavior and quality of meat during cooking, i.e., the firming, syneresis (water release), chew texture, or mouthfeel.SELECTED DRAWING: None
