PURPOSE: To obtain the titled noncaloric substance, consisting of a sucrose ester of a fatty acid, consisting of a specific fatty acid component and having a composition of specific ester substituted degree, with excellent properties and flavor as a hard butter substitute and good for health.
CONSTITUTION: The aimed substance consisting of polyester of sucrose polyester of a fatty acid which is a polyester of a sucrose ester of a fatty acid having a fatty acid derived from laurin based fats and oils, lauric acid or myristic acid as principal constituent fats and containing ≤20wt.% ester derivative having 1W3 substitution degree and ≥5 average substitution degree of the residual esters. The above-mentioned substance is obtained by, e.g. heating sucrose and a lower alcohol ester of the above-mentioned fatty acid, such as methyl laurate, in an organic solvent it in the presence of an alkaline catalyst under reduced pressure, simultaneously distilling off the solvent as the reaction proceeds and carrying out ester interchange reaction under condition so as not to finally leave the solvent.
