Abstract:

PROBLEM TO BE SOLVED: To obtain a readily ingestible health food product containing stabilized β-carotene and suppressing the smell of mushroom extract by admixing an extract of microalga with hot water to chitosan, agar and mushroom extract.
SOLUTION: A micro alga, such as Nostoc flagelliforme, is cultured in a liquid culture in which cotton cloth are extended at a pH of 8.0 at 30°C under illumination of 3,000 lux, the cell bodies of the alga sticking to the cotton cloth are scraped off, freeze-dried, then crushed to obtain a dried powder of the cell bodies. The cell bodies are combined with water, stirred at about 90°C for 20 minutes, chitosan and agar are added thereto, stirred for 5 minutes, then the liquid temperature is towed down to 40°C. An extract of a mushroom, Agaricus blazei Murr. is admixed, then the mixture is spray-dried and molded into tablets or granules to give the objective health food product which stabilizes β-carotene, inhibits the odor of mushroom and is readily ingestible.
