Abstract:

PURPOSE: To provide a health food effective to decrease the cholesterol level in blood, increase the body weight and suppress the deposition of neutral fat in liver and the deposition of fat to the body, and containing a processed non- volatile salt prepared by neutralizing an unrefined SAKE or vinegar, etc. prepared by acetic acid fermentation with a basic calcium-containing substance, etc.

CONSTITUTION: Unrefined SAKE or vinegar prepared by acetic acid fermentation or its separation residue is neutralized with a basic or neutral calcium-containing substance (e.g. calcium hydroxide) to neutralize acidic volatile components to non-volatile components. The treated product is used as a component of the objective health food. The product may be used as it is, or used after the defatting, concentration, drying or pulverization treatment.
