PURPOSE: To obtain a readily edible healthy food, preservable for a long period without deteriorating pharmacodynamic effects and using an andrographis as a raw material.
CONSTITUTION: This healthy food is obtained by drying at least a leaf part of an andrographis and powdering the dried leaf part. A stem may be mixed with the leaf for use. When the leaf part is washed with water, quick-dried and then pulverized into a powdery form, oxidizing actions with a contained oxidase are suppressed. Thereby, the food is not discolored to black and the leaf part can be dried in a state of intact green color to enhance the merchandise value. The rapid drying is carried out by using a microwave heating means or further a microwave oven and an air blasting means together at a temperature within the range of 80-130°C. When the quick-dried andrographis is finely fragmented, the resultant material can be filled in a container, etc., preserved for a long period, decocted in the same manner as green tea and drunk.
