Abstract:
PROBLEM TO BE SOLVED: To perform a quick heating to prevent propagation of bacteria by providing a heating cabinet with an air blow quantity control means for ensuring a high air quantity in thawing and heating operation and switching the air quantity to a relatively low air quantity in warming operation in a heating cabinet having a cooking chamber, heating means for heating the cooking chamber, and blowing means.
SOLUTION: In cooking of a frozen food, the frozen food is placed on a tray 5 and put into a cooking chamber R1, and a control panel is then operated to set a heating temperature S2, thawing and heating time T2, a warming temperature S1, and humidity. Operation is started, and performance of an electric heater 7 is controlled so that the temperature rising speed is constant until the temperature within the cooking chamber R1 rises to S2 from the operation start. The performance of a humidifier 10 is also controlled so that the humidity within the cooking chamber R1 is a set value. After the time from the operation start reaches T2, then, a blower 6 is switched from high speed rotation to low speed rotation, and the performance of a dehumidifier 11 is controlled under a low air quantity until the temperature within the cooking chamber R1 is lowered to S1.
