Abstract:
PROBLEM TO BE SOLVED: To prevent the edible time of a food material from being shortened due to the decline of a temperature inside a steaming chamber caused by opening a door in a heating hot storage device for performing the heating and heat insulation of the food material housed inside the steaming chamber by steam.
SOLUTION: This heating hot storage device performs the processes of the heating for introducing the relatively large amount of the steam into the steaming chamber 1 and the heat insulation for introducing the relatively small amount of the steam to the steaming chamber 1 by housing the food materials 7 inside the steaming chamber 1, supplying the steam through a steam supply pipe 4 provided with a steam control valve 8 to the steaming chamber 1 and controlling the opening and closing of the steam control valve 8 by an operation controller 11. Then, a sensor 3 for detecting the opening and closing of the door 15 of the steaming chamber 1 and a steam amount limiting means 14 for limiting a steam amount to be introduced to the steaming chamber 1 are provided, the sensor 3 and the steam amount limiting means 14 are electrically connected to the operation controller 11 and the steam for the amount limited by the steam amount limiting means 14 is supplied during it is detected that the door 15 is opened by the sensor 3.
