To provide a heating and stirring apparatus which efficiently supplies hot air through hot air jetting holes present in the contents by preventing hot air from jetting through exposed hot air jetting holes, thus can homogeneously heat the contents and can homogeneously and sufficiently supply a gas, e.g. oxygen or the like.

In the heating and stirring apparatus having a stirring mechanism 2 for stirring the contents contained in a stirring vessel 1 and a hot air supply mechanism 3 for heating the contents, the stirring mechanism 2 has a plurality of hollow members 9 projecting from a horizontally installed rotary shaft 7 and stirring blades 8a, 8b fixed to the hollow members 9; and the hot air supply mechanism 3 has a hot air transport route comprising the hollow members 9 and a hollow section of the rotary shaft 7, hot air jetting holes 10a formed at the stirring blades 8a, 8b or their vicinities and for jetting hot air supplied from the hot air transport route, and a hot air switching means 19 for supplying hot air selectively to the hot air transport route so that hot air is jetted from only hot air jetting holes 10a present at the position where the contents are present.
