Abstract:

To provide a corn starch having an amylose content of higher than 80% and a composition thereof.

The corn starch having an amylose content of 90% or more is formed by means of a hybrid produced by crossing an inbred strain having an ae-amylose increaser gene to the parent line of a corn seed. Such a starch and a derivative thereof have a large content of the molecule with high linearity, thus being suitable for a synthetic plastic material and the like.
