Abstract:
PROBLEM TO BE SOLVED: To provide a highly crystalline material-containing composition in which a highly crystalline material can be easily and uniformly dispersed in water, which has high stability to produce no crystal or no precipitate even when preserved for a long period of time under severe conditions of low temperature or high temperature and further which is excellent in acid resistance, salt resistance, heat resistance and alcohol resistance and to provide a food and drink or a cosmetic containing the composition.SOLUTION: The problem described above is dissolved by containing following (A) to (C). (A) highly crystalline material. (B) polyglycerol fatty acid ester which is obtained by esterification of polyglycerol, that has a hydroxyl group value of ≤1,200, a primary hydroxyl group of ≥50 wt.% among whole hydroxyl groups and annular body content of ≤25 wt.%, with fatty acid. (C) a kind of liquid oil which has IOB (inorganic/organic balance) value of 0.20 to 0.60 and is chosen from a group composed of dicapric acid propylene glycol, dodeca (caprylic-capric acid) decaglycerol and diisostearic acid triglycerol.
