Abstract:

To provide high-water ingredient containing chocolate which is suitable for long-term preserving and hard to deteriorate with time in eating quality of the chocolate.

The high-water ingredient containing chocolate which is formed by adding a high-water including ingredient to a chocolate material, is characterized in that the water activity of the high-water including ingredient is 0.40-0.64, and the water activity of the chocolate material is 0.40-0.64.
