Abstract:
To suppress the amount of neutralizer added during fermentation production, and improve the efficiency of purification, in fermentative production of glucaric acid.SOLUTION: Glucaric acid is produced by allowing highly acid-resistant microorganisms or their treated products to act on organic raw materials in an aqueous medium having a pH of 5 or less, the highly acid-resistant microorganisms or their treated products having myo-inositol-1-phosphate synthase activity, myo-inositol monophosphatase activity, myo-inositol oxygenase activity, and uronic acid dehydrogenase activity.SELECTED DRAWING: Figure 1
