Abstract:

PROBLEM TO BE SOLVED: To obtain an indigestible dextrin having high degree of branching and to provide its producing method.
SOLUTION: This highly branched dextrin is obtained by decomposing starch by α-amylase or an acid, and then decomposing by β-amylase or a mixture of the α-amlylase and β-amylase, and the obtained dextrin has 10-20% of 1.6 linkage/1.4 linkage ratio (%). A producing method of the dextrin is provided. The highly branched dextrin is useful for a functional food and drink and as a nutrient for diabetic patients or those people who are doubtful of diabetic by suppressing the rising of blood glucose level because it has many branched structures and so is indigestible.
