Abstract:
PROBLEM TO BE SOLVED: To provide a high acid taste soft candy excellent in durability during long storage even without packaging individually, having no deformation nor stickiness, hardly generating binding soft candy drops each other and good in flavor with natural sweetness with umami in a soft candy mainly containing sugar exhibiting strong acid taste.SOLUTION: The above described problem is achieved by a high acid taste soft candy containing sugar of 47 wt.% or more in whole weight of the saccharide sweetener contained in a soft candy and having pH of 100 times diluted solution of the soft candy of 3.2 or less and containing organic acid having solubility to water 100 g or 100 cmat 30°C of 22 g or less.SELECTED DRAWING: None
