Abstract:
To obtain a honey cookie having solid and shortened texture original to the coolie, and further to provide a production method thereof.
This honey cookie contains 20-40 wt.% honey, does not contain sugar, and further contains hardly peptic dextrin. The amount of the hardly peptic dextrin to be used is preferably 8-20 wt.% of that of the honey to be used. The production method of the honey cookie comprises kneading flour, the honey, the hardly peptic dextrin and a solid fat with other auxiliary materials, molding the kneaded product, and baking the molded product.
