Abstract:
To provide a process for holding a high content of GABA in a barley young leaf that requires only a few additional facilities and does not cause a decline in production efficiency.SOLUTION: A process for holding a high content of γ-aminobutyric acid in a barley young leaf includes subjecting a fresh barley young leaf to superheating for 5 seconds or more and 120 seconds or less with the superheated steam heated to 200°C or higher and 600°C or lower.SELECTED DRAWING: None
