Abstract:
PROBLEM TO BE SOLVED: To provide a method for producing a coffee extract useful as the raw material of a coffee beverage in which astringency is suppressed while reducing hydroxyhydroquinone.SOLUTION: Provided is a method for producing a coffee extraction liquid where, into an extraction machine, an extraction solvent is fed to bean layers obtained by successively laminating the following (A) and (B): (A) denotes first roasted coffee beans having an L value of 14 to 20; and (B) denotes a second roasted coffee beans having an L value higher than that of the first roasted coffee beans from the upstream side in a liquid passing direction so as to satisfy the conditions shown in the inequality to extract a coffee extraction liquid h/h×100≤80(1) [in the inequality (1), the hdenotes the height (m) of a mixed bean layer obtained by mixing (A) the first roasted coffee beans and (B) the second roasted coffee beans into the layers of (A) the first roasted coffee beans and (B) the second roasted beans, and the hdenotes the height (m) of the whole coffee bean layers].SELECTED DRAWING: None
