Abstract:
To provide a manufacturing method of fried foods having good texture with crispiness like just fried, even when re-heated by microwave oven at temperature or after refrigeration and taken, and having fried coat good in mouth melting without oleaginous, and fried foods.SOLUTION: There is provided a manufacturing method of fried foods including a process for coating fried foods with a thermally molten oil and fat after frying, in which solid fat content of the oil and fat is 75% or more at 5°C, and 70% or less at 40°C. There are provided fried foods having an oil and fat layer on a surface of fried coat, in which the solid fat content of the oil and fat forming the oil and fat layer is 75% or more at 5°C, and 70% or less at 40°C.SELECTED DRAWING: None
