Abstract:
To provide a manufacturing method of soybean milk for foaming hardly breaking foams even with adding soybean milk with which foaming is conducted to coffee or the like, and excellent in foaming force and foaming stability.SOLUTION: There is provided a manufacturing method of soybean used by being foamed by a steamer, including emulsification by using soybean, oil and fat of 0.1 to 5 wt.% based on soybean weight, and one or more of emulsifier selected from polyglyceryl fatty acid ester, sucrose fatty acid ester and organic acid monoglyceride. There is provided a manufacturing method of foamed soybean by foaming the same by the steamer after emulsification by using soybean, oil and fat of 0.1 to 5 wt.% based on soybean weight, and one or more of emulsifier containing the organic acid monoglyceride.SELECTED DRAWING: None
