Abstract:

To provide a new method for producing fermented feed containing soy sauce lees.

The method for producing fermented feed containing soy sauce lees comprises culturing microorganisms belonging to a genus Neurospora sitophila having phytase-producing ability or a genus Rhizopus oligosporus on solid culture media comprising a mixture of soy sauce lees of ≤90 wt.% based on the whole of the weight of solid materials with solid feed raw material of ≥10 wt.% based on the whole weight of the solid material, and water of 80-180 wt.% based on the weight of the mixture so as to make ≥2 unit/g of plytase accumulate. The method enables effective utilization of the soy sauce lees.
