Abstract:
PROBLEM TO BE SOLVED: To simply and efficiently obtain a lactic acid bacterium without amino acid decarboxylating actions and further obtain a fermented food and drink with a low amine content by using the resultant lactic acid bacterium. SOLUTION: A lactic acid bacterium having decarboxylating actions is subjected to a contact reaction with an acid solution such as hydrochloric acid or lactic acid at pH<=3.0 to provide a lactic acid bacterium without the amino acid decarboxylating actions. The fermented food and drink with a low amine content is produced by using the resultant lactic acid bacterium.
