Abstract:
PROBLEM TO BE SOLVED: To provide the new flaked bonito product and its production method which is to obtain the flaked bonito product with reduced salt concentration from normal flaked bonito products (fish flaked product) processed in node such as bonito and mackerel.SOLUTION: This invention features that to obtain the flaked bonito product by after roasting treatment of dried bonito of fish meat processed in node, immerse it in hot water for a suitable time, and cut it to an appropriate thickness under lowered salt concentration of the dried bonito. Moreover, it is preferable that the dried bonito immersed in hot water is subjected to flaking work after stored in a refrigerated state for a suitable time.SELECTED DRAWING: Figure 1
