Abstract:

To provide a composition using starch for providing necessary gelling characteristics of a food product and intended for meeting needs of the composition.

This hydrocolloid composition, particularly a starch composition, is useful as a viscosifier and/or stabilizer in food products, particularly a cultured dairy product. A product containing such hydrocolloid composition and a method for preparing such products are also provided. The composition is replaced with at least a portion of gelatin, gum and/or non-fat milk solids present in food products without losing the organoleptic and structural properties of the product.
