Abstract:

PROBLEM TO BE SOLVED: To obtain a modified starch useful as a thickening agent for foods, etc., and a viscosity imparter, capable of providing a composition such as foods, etc., with proper viscosity due to its high viscosity, excellent in stability and transparency, fine and smooth in texture, comprising a specific potato starch.
SOLUTION: This starch comprises a hydroxypropylated cross-linked waxy potato starch such as a hydroxy propylated waxy potato starch (A). The component A, is obtained, for example, by preparing a starch slurry from a waxy potato starch and water, adding sodium sulfate to the starch slurry, then adjusting the slurry to pH11-12 by adding a solution of sodium hydroxide, reacting the slurry with propylene oxide at 40-45°C, stabilizing the starch, cooling to 30°C, crosslinking the starch with phosphorus oxychloride as a cross-linking agent, adjusting the starch to pH3.0, retaining for one hour, neutralizing the slurry with a solution of sodium hydroxide into pH 5 7, washing with water and drying.
