Abstract:
PURPOSE: To efficiently obtain a sugar alcohol used as a bifidus factor, excellent in non-digestibility and slight digestibility, and useful for healthy foods, etc., in a high yield by hydrolyzing a specific plant, separating fructo oligosaccharide, etc., from the obtained soluble part, and subsequently reducing the separated fructo oligosaccharide, etc.
CONSTITUTION: A method for producing the fructo oligosaccharide alcohol comprises hydrolyzing a plant such as Helianthus tuberosus L. containing a fructose polymer such as inulin, separating fructo oligosaccharide or its mixture with fructose from the obtained soluble part, and subsequently reducing the separated fructo oligosaccharide or its mixture.
