PURPOSE: To express a taste of SO (a curd prepared by condensing a cow's milk or sheep's milk) in a cake taste by mixing the solid SO which is an Japanese ancient meal with a material for a foreign confectionery such as a cake without any sense of incompatibility.

CONSTITUTION: This ancient flavored cake is obtained by spreading a binding jam 2 on the top surface of a sponge cake 1 and fixing solid SO 3 prepared by forming thereof into the shape of a thin sheet or a dice through the binding jam on the whole top surface of the sponge cake.
