Abstract:
PURPOSE: To obtain the liquid food containing a specific pectin, capable of being gelatinized at a specific pH value, having a hyperphagia-preventing effect, and capable of preventing the sudden increase in a blood glucose value in a diabetic or glucose-resisting ability-lowered patient.
CONSTITUTION: The liquid food is a food produced by purifying a citrus, an apple, etc., containing a pectin having a DE value of ≤40% (preferably ≤35%), and capable of being gelatinized at a pH of ≤3 in the absence of protein, divalent cations, sugar, etc.
