Abstract:

PURPOSE: To obtain a new ice cream using rose jam.

CONSTITUTION: This ice cream is obtained by incorporating a starch syrup-like rose jam in a mixture comprising cow milk, dairy product, saccharide, stabilizer, emulsifier, pH adjustor, coloring matter, perfume and water, followed by freezing and hardening the blend; or, by adding water to the mixture to obtain a solution which is then heat-sterilized and frozen followed by mixing the rose jam and then freezing again and hardening. The rose jam is prepared by heating a mixture of rose petals, sactctharide, corn soup, stabilizer, acidulant and water at a temperature just before boiling for 3 to 4hr or so to effect dissolution of the components except fibers followed by cooling into a starch syrup-like product.
